In just a few short hours my college roommates and their husbands/boyfriends will reunite for a weekend of catching up, playing cards and eating lots of good food. I'm not a patient person and I woke up this morning bright eyed as if we were going to Disney World. In reality we are doing the next best thing....staying at a cabin nestled in the heart of Valle Crucis, NC.
Since the cabin is so close to our former University, I'm sure we will all drive by the Greenway house and remember those days of five girls sharing one shower and a two year non stop sleepover (I used to jump in bed with Ash on Saturday mornings and watch TV, ha)! I certainly will never forget all the love, support and spiritual wisdom I gained from living with such Godly women.
We even gave Ashley a bridal shower in that house....
My favorite Christmas was the last one with all five of us. Ashley was about to get married and move out so we made special effort to have our own Christmas party and take lots of pictures. It was a bittersweet because the times were a changin' but we had a blast (even though Rachael looks so bored, love her).
Can you tell I'm super excited? We reunited at Courtney's wedding then my wedding but let's be real...weddings are way too busy to play catch up. I'm ready to be lazy with the ladies and talk about girl stuff. However this time I can't jump in bed with Ash on Saturday morning hence the whole husband thing. Awkward.
Anyways, the point of this post. In honor of the good ol' days I decide to make a snack to take to the cabin that I used to make in college. I present to you....
Cinnamon Sugar Tortilla Chips
What you need:
- 3 Tbs. Butter
- 1/4 cup of Sugar
- 3-4 Tortillas
- Ground Cinnamon
Directions:
1. Using a pizza slicer, I cut my tortilla into triangles then place on an ungreased pan (lighter the pan the better).
2. Melt butter and brush over each triangle (top only).
3. Combine sugar and ground cinnamon in a bowl and stir. Sprinkle over the buttered tortillas.
4. Bake at 350 degrees for about ten minutes. FYI: Darker pans cook faster.
5. Remove with spatula immediately and place in ziplock baggie or tupperware.
6. ENJOY!!
There are great! They remind me of the brand Stacy's Pita Chips but way cheaper to make! You can also do this if you want to make lightly salted chips for hummus. Trust me...it's easy and efficient plus you know what ingredients went into it which is always better for you.

Todd seriously thinks I'm going crazy. He has a hard time seeing the end of DIY projects and has been joking me about this one every since I came home and said. "Babe, can you get this stump out of my trunk because it is way too heavy...?"
Ha, his reaction was priceless.
